    For anyone that remembers Noel ‘Wheezy’ Gomez. He was involved in a fatal motorcycle accident this past Saturday. His funeral will be on Thursday May 23 at Compean Funeral Home, Broadway Street, Houston, TX 77012

      Sad to hear about the news on Weezy, Mike. He was with us up until the end of 2010. I know you, Khara and Fam work with him. My prayers and thoughts to his wife, Caci, their baby and the rest of the family.

    Wrote 219 on the board, but apparently looked at the conversion chart on the side board incorrectly. I got through 60 plate hops + 9 pushups so it was really 294 (plate hops, squirrely pushups).

    Just stayed with 70# because it was obvious that my left side is so much weaker than my right side on strict presses , left arm was about 3-4 seconds slower than the right side to fully extend. It was pretty comical! Anyway, the hot nooners were madly entertained with the lopsidedness – eek! So I stayed with 70 until I could consistently lift pretty evenly. You missed that one The Jimy! The rest of the class were pressing like it like a boss!

    This time last year it took me 20 minutes to get 100 DUs, so I would say even though my score is low, it’s a vast improvement…..DUs are work in progress.

    About that recipe 🙂
    Ingredients:

    ¾ cup coconut flour
    ¼ teaspoon sea salt
    1/4 cup melted butter, or use virgin coconut oil or even 1/2 cup EVOO.
    1 cup almond milk (can use any milk, coconut, etc.)
    5 eggs
    1 tablespoon vanilla extract
    1/4 C of honey
    Your favorite trail mix (mine had craisons, dried blueberries, white chocolate chips and almonds)
    Shredded Coconut

    Directions

    *Preheat oven to 350 degrees. Grease a baking sheet.
    *Whip 5 eggs thoroughly. Add almond milk and honey
    *Add butter/oil and vanilla extract
    *Add coconut flour and salt. Mix in trail mix.
    *drop spoonfuls onto baking sheet, sprinkle coconut flakes on top and bake for 18-20 minutes (middle rack). Cool and enjoy.

    Pretty much just mix everything together starting with wet ingredients, then bake. It’s normal for the batter to be slightly runnier than a normal cookie batter, but not runny enough to not hold form when you put them on the sheet. They don’t rise like cookies or a cake, so you can drop heaping spoonfuls pretty close together. Good luck!!
